Why Sheet Pan Pancakes (using pancake mix) are the Perfect Breakfast Solution
If you're looking for an easy and delicious breakfast idea that can feed a large group of people, sheet pan pancakes are the perfect solution. Here’s why they’re a favorite of ours.
- They're super easy. Instead of standing over a hot stove flipping individual pancakes, you can make an entire batch of pancakes at once in the oven, making these flapjacks mostly hands-off. Plus, with a sheet pan, you don't have to worry about pancake batter spilling over the edges of your skillet. Less mess and less fuss? Already sold.
- Quick. No joke, these oven-baked pancakes can be made in 15 minutes. The prep is almost zero and then everything just cooks at once in the oven.
- Customizable. I love making the base of these sheet pan pancakes from a storebought pancake mix, but after that, the sky's the limit. You can add whatever your heart desires to these delicious sheet pan pancakes. Fruit, chocolate, bacon, cheese - the choices are endless. And, because you make everything in a large sheet pan, you can even section off portions of the pan for specific ingredients if you have picky eaters on your hands.
- You can make them ahead of time. While you wouldn’t want to make the pancake batter too far ahead, you could make the entire batch of sheet pan pancakes from mix ahead of time and just heat it quickly in the microwave before serving.
- Great for a crowd. This dish is a great option when you’re feeding a group of people. After all, no one wants to be standing over a hot stove all morning when you have company! We love serving them with this easy oven-baked bacon and creamy scrambled eggs.
- They freeze really well. You know those mornings when you’re trying to rush out the door and need something quick? Sheet pan pancakes to the rescue! Just take them from the freezer straight to the microwave for a quick and tasty start to your morning.
Key Ingredients
To make easy pan pancakes, you'll need a few basic ingredients:
- Pancake mix. You can use any type of pancake mix you like, but I love Kodiak Cakes. This mix is made with whole grains and has a delicious, nutty flavor. Plus, Kodiak pancake mix is loaded with protein. Using milk and eggs as your mix-ins, you’ll get a whopping 18 grams of protein per serving. This makes me feel just a little bit less guilty about indulging in pancakes for breakfast.
- Eggs. Eggs will help bind the pancake batter together and make it fluffy.
- Milk. Milk adds moisture to the pancake batter and helps the pancakes cook evenly.
- Oil or butter. You'll need a little oil or butter to grease the sheet pan and prevent the pancakes from sticking.
- Toppings/Add-ins. You can use any toppings you like, such as fresh fruit, chocolate chips, or nuts. I used strawberries, blueberries, and chocolate chips.
See the recipe card for quantities.
How To Make Baked Pancakes From Kodiak Mix
Here's a step-by-step guide for making these sheet pan pancakes from mix:
- Grease Your Pan. Preheat your oven to 425°F and grease a 13x18 inch sheet pan with cooking spray or melted butter. (Tip - if using butter, just place it directly on your pan and pop your pan into the preheating oven for a few minutes. The butter will melt perfectly and you can just swirl it around a bit to coat the pan. If using this method, just be sure to watch it closely and take it out before the butter burns!)
- Whisk. In a large bowl, whisk together the pancake mix, eggs, and milk, until well combined.
- Spread. Pour the batter onto the prepared sheet pan and spread it out evenly with a spatula.
- Add some toppings. Add your toppings to the pancake batter. (I used blueberries, strawberries, and a few chocolate chips.) Just sprinkle these add-ins directly over the batter after you’ve spread it into the sheet pan.
- Bake. Bake the pancakes in the oven for about 12 minutes or until the pancakes are golden brown and cooked through.
- Cut and serve. To serve, cut the pancakes into squares and serve with your favorite toppings.
Hint: Keep an eye on the pancakes and don't overcook them! You'll know they're done when you can place a toothpick in the center and it comes out clean.
Customize Your Pancakes With Delicious Add-Ins!
One of the best things about sheet pan pancakes is that you can customize them with any toppings and add-ins you like. Just add these ingredients right into the batter on the sheet pan before baking the pancakes in the oven. Here are a few ideas to get you started:
- Fresh fruit. Add sliced strawberries, blueberries, bananas, or any other fruit you like to your pancakes. You can even mix different fruits together for a colorful and flavorful breakfast.
- Chocolate chips. Who doesn't love chocolate for breakfast? Sprinkle chocolate chips on top of your pancake batter before baking for a decadent treat.
- Nuts. Add some crunch to your pancakes by sprinkling chopped nuts on top. Pecans, walnuts, and almonds all work well.
- Bacon. If you like savory breakfasts, try adding crumbled bacon to your pancakes. The salty flavor pairs perfectly with sweet maple syrup.
- Cheese. Yes - you heard it hear first! Cheesy pancakes are great when you don’t want something overly sweet. Add that bacon to them and you’ve got a winner!
You can also experiment with different pancake mix flavors to create unique and delicious pancakes. For example, try using a cinnamon-flavored mix for a cozy fall breakfast or a chocolate-flavored mix for a special
Benefits of Making Sheet Pan Pancakes With Pancake Mix
You may be asking yourself why making sheet pan pancakes from a mix is so great. Well, let me share a few reasons:
- Pancake mix makes the process of making pancakes soooo much easier and quicker. With pancake mix, you don't have to worry about measuring out flour, sugar, baking powder, and other ingredients. Instead, all you have to do is add a few simple ingredients like eggs and milk, and you're good to go. It’s a total time saver!
- In addition to being easy, pancake mix can also add extra flavor and nutrition to your pancakes. Many high-quality pancake mixes like Kodiak Cakes are made with whole grains, which means that they are a good source of fiber and other nutrients. In the case of Kodiak Cakes, the mix also contains more protein than you would find in a typical pancake mix. Plus, these mixes often include delicious flavorings like vanilla, cinnamon, or nutmeg, which can make your pancakes taste even better.
- Finally, using pancake mix can be more cost-effective than making pancakes from scratch. While a box of pancake mix may seem more expensive than buying flour and other ingredients separately, you'll likely end up saving money in the long run. This is because pancake mixes often include all the ingredients you need for pancakes, so you won't have to buy each ingredient separately.
Tips For Making Perfect Sheet Pan Pancakes
Making these oven-baked sheet pan pancakes is easy, but there are a few tips you should keep in mind to ensure that they turn out perfect every time.
- Grease your pan. First, make sure that your pan is well-greased with cooking spray or butter to prevent the pancakes from sticking. You can also line the sheet pan with parchment paper for easy cleanup.
- Spread the batter evenly. Second, be sure to spread the pancake batter out evenly on the sheet pan. This will ensure that the pancakes cook evenly and are the same thickness. If your batter is too thick to spread easily, you can add a little extra water to thin it out.
- Don’t overcook! Don't overcook your pancakes. The sheet pan pancakes should be golden brown and cooked through, but not dry or burnt. Keep an eye on them in the oven and take them out as soon as they're done.
- Section off your pancakes! Have some picky eaters in your group? Making pancakes this way allows you to customize them for everyone by only adding specific toppings to certain sections of the batter in the pan!
Jazzing Up Your Boxed Pancake Mix
If you want to add some extra pizzazz to your pancakes made from mix, there are plenty of ways to do it! One of the easiest ways is to add some mix-ins to your batter. You can add anything from chocolate chips or blueberries to nuts or shredded coconut. Simply fold these ingredients into your pancake batter before pouring it onto your sheet pan, and you'll have a deliciously unique breakfast.
Don’t forget about spices! Adding a touch of cinnamon or nutmeg can enhance the taste of your pancakes, depending on the flavor you’re after.
Of course, another way to jazz up pancake mix is to experiment with different toppings. While traditional toppings like butter and syrup are always a hit, you can get creative by trying out different fruit compotes or spreads like Nutella or peanut butter. You can also sprinkle toppings like powdered sugar, chopped nuts, or even bacon bits on top of your pancakes to add extra flavor and texture.
Don't be afraid to get creative with your pancake mix and try out new flavor combinations. With a little bit of experimentation, you can turn a simple box of pancake mix into a breakfast masterpiece that your whole family will love.
Frequently Asked Questions
Yes, you can! Sheet pan pancakes from mix are a regular occurrence at our house on the weekends and has made life so much easier! No more standing over a hot pan waiting to flip pancakes. This recipe produces the same delicious fluffy pancakes, with half the work.
You should use a 13x18x1-inch pan to make these sheet pan pancakes.
Butter provides a nice taste to the pancakes, and prevents the pancakes from sticking but you don’t have to use it. Feel free to use cooking spray instead. Or, you can even cut parchment paper to fit your pan, making it easy to lift the pancakes out of the sheet pan once they’re finished baking.
Yes! This is a great recipe to make ahead of time. You can store the cooked pancakes in the fridge for 3-4 days in an airtight container, then reheat them when you’re ready to serve them.
I love Kodiak pancake mix since it has a bit more protein (and even gives you ideas on the package of how to get more protein by adding additional eggs and milk!). However, other common pancake mixes like Bisquick or Krusteaze would work great too. Feel free to use your favorite.
Eggs work great to bind the pancakes together, but if you can’t use eggs because of an allergy, or if you’re vegan, there are substitutes for eggs that work just as well. Flax seed mixed with water, mashed banana, pumpkin puree, or commercial egg replacers all work well. (Check the recipe for the pancake mix too - some don't even require eggs!)
Freezing And Reheating Instructions
Sheet pan pancakes from mix freeze up wonderfully and make for a super easy breakfast on busy mornings. To freeze, allow the pancakes to cool completely, and slice into easy-to-store squares. Place the square pancakes in an airtight ziplock bag, making sure to squeeze out any excess air. They'll keep for about 3 months in the freezer.
To reheat this easy breakfast, align the square-cut pancakes evenly on a large plate and heat them in the microwave for about 1 - 1 ½ minutes (this will depend on how many you are reheating at a time). If reheating from frozen, you may need an extra minute or so.
Sheet pan pancakes from mix are a quick and easy breakfast solution that the whole family will love. Whether you're using Kodiak mix or another favorite, you can customize your pancakes with delicious toppings and make them into fun square shapes. We love serving them with this delicious easy oven-baked bacon and ultra-creamy scrambled eggs. Give sheet pan pancakes a try and see how easy and delicious breakfast can be!

Sheet Pan Pancakes From Mix
Ingredients
- 2 ½ cups Kodiak Cakes pancake mix (or another mix like Bisquick or Krusteaz)

- 2 cups milk
- 1 tablespoon oil or butter, melted
- toppings of your choice - I used strawberries, blueberries, and chocolate chips
Instructions
- Preheat your oven to 425 degrees.

- Pour the pancake batter into your prepared sheet pan and spread it evenly across the pan with a spatula. Then top with your choice of add-ins (just sprinkle them right on top of the batter). Strawberries, blueberries, and chocolate chips are a delicious combination!

Super easy way to make pancakes for the family. Doing it this way lets me focus on the bacon and eggs. I do suggest checking them as 7 or 8 minutes in.
Sarah Jenkins says
Thanks Tom! Glad they worked for you - I love how easy this method makes it!
Abby Rhoads says
We love these so much and have great results using parchment paper on the cookie sheet. Do you know what the serving size would be in grams or ounces? Thanks!
Sarah Jenkins says
Hi Abby,
I'm sorry - I don't! I usually just divide the recipe into 8 equal pieces but am unsure how that works out to grams.
Erica says
Delicious and easy
Sarah Jenkins says
Thanks Erica!

This was a fun and easy way to make pancakes!
Allison says
Just made these OMG so good! Question if not freezing, how to store? In pan plastic wrapped? In fridge? To keep them fresh and not dried out for a day or two!
Sarah Jenkins says
Thanks Allison! I usually just cut them up into individual pieces and store them in a ziplock in the fridge. (This is also a great way to freeze them if you want to!). They should keep well for a couple of days in the fridge and won't dry out.
Pauli says
I just made this but I cut the recipe in half and used a quarter sheet pan (9"x12) as I didn't want to turn on the big oven. Cooked them in my air fryer toaster oven for 10 minutes and they came out perfect! Wow so easy! I also added 1tbs of vinegar to the milk to make buttermilk as I find the kodiak mix doesn't lift very well so this makes them fluffy.
Mary says
Hi! I’m curious about how much this recipe’s batter fills a 13x18 pan. Will a 13x18 pan also hold a double batch, just thicker? Or if I double the recipe, do I need two pans?
Thank you!
Sarah Jenkins says
Hi Mary,
I haven't tried to do a double batch in a 13x18 pan - I would assume that it would just be a bit thicker. I'd just be a little careful to make sure it doesn't go over the sides! Let me know how it turns out!
Will says
I just did the double batch (used the whole box of mix). They came out a little thicker than the average pancake. Maybe 1/3 of a toothpick. Hope this helps
Sarah Jenkins says
Awesome! Thank you for sharing!
Dexter says
Big question here if you’re still looking at this thread. I made the Kodiak cakes per the directions on the box and got a dough vs a batter. What did I do wrong?
Sarah Jenkins says
Hi Dexter,
I can only speak confidently to the recipe listed here, bit I would imagine you just need to add a little more milk/water to get then consistency you want.

“1. Grease Your Pan. Preheat your oven to 425°F and grease a 9x13 inch sheet pan “
“What size pan do I need to use? You should use a 13x18x1-inch pan to make these sheet pan pancakes.”
So at the beginning of the post you say to use a 9x13 and then later you say to use a 13x18x1. Which one is correct?
Sarah Jenkins says
So sorry! Please use the 13x18 for this recipe.
Shaina says
Thank you! This was great. Worked perfectly. I did my usual substitutions/additions with the kodiak mix. (Use 0.5 cup applesauce and only 1.5 cups milk, a tsp of cinnamon, tsp of vanilla). Added frozen blueberries to the mix before I poured it in. Used parchment paper and didn’t even have to clean my pan. I could’ve eaten those all day long. About to make another batch now!
Sarah Jenkins says
Yay! So glad it worked for you!

This was so easy to make and perfect for breakfast meal prepping! I used mostly blueberries and a few raspberries that I happen to have on hand.
Jane says
These pancakes are SO good! I'm a big fan of the cinnamon and chocolate chips. It's like eating cake for breakfast!
Hannah says
Thanks so much for this — Have you tried making this recipe without the eggs and milk added? Did it work out okay? I just love to eat my eggs on the side! Also - do you ever add more butter on the top or anything while baking?
Sarah Jenkins says
Hi Hannah,
I think it would be ok, but I'd defer to the box of pancake mix you're using. I used Kodiak pancake mix which says you can just use water and the mix, but I like to substitute the milk for the water and add the eggs for protein. If you're using a mix that says just to add water (or milk), you'd probably be fine. I don't typically add butter to the top while baking - i just grease the pan prior to adding the batter so that the pancakes don't stick. Good luck!
Whitney says
I would really like to know the macros for this recipe.
Sarah Jenkins says
Done! Note that this may vary a bit depending on if you use a different type of boxed pancake mix so be sure to also check the macros for whatever you decide to use.
Hayley Gold says
If you use the kodiak mix, can you just add water?
Sarah Jenkins says
Hi Hayley,
You can! I like to add the eggs and milk vs. the water for extra protein and I think they taste better, but if you can't have dairy or just want to use water that works too.
John says
LOVE These! So much easier than making individual pancakes. We made them when family was visiting to rave reviews!! And used Kodiak mix (the best, IMO!!)
Sarah Jenkins says
So glad you liked them!

Used the chocolate Kodiak cakes and added strawberries as breakfast prep for work! Smells great and looks great! Very east recipe to follow and adjust to your liking!
Sarah Jenkins says
Oooh...that's a great idea! I haven't tried the chocolate Kodiak cakes but now I'm going to have to! Thanks for the tip!

can i make this without egg?
Sarah Jenkins says
Yes! You can substitute banana or pumpkin in place of the egg if you prefer to not use eggs.
